RECIPES: Spinach and Potatoes with Poppy Seeds

  • Ingredients:
  • 1 bunch spinach, cleaned and chopped
  • 4-5 medium potatoes, chopped
  • ½ cup poppy seeds
  • 1 tsp mustard seeds
  • 1 tsp fenugreek seeds
  • 2 green chilies, finely chopped
  • 1/2 tbsp fresh ginger, finely chopped
  • 2 tbsp vegetable oil/ghee
  • ½ tsp turmeric powder
  • Salt to taste

Instructions:

1. Heat oil/ghee in a pan.

2. Add mustard seeds, fenugreek seeds, chilies, and ginger to the hot oil. Cook for 1 minute.

3. Add turmeric powder, salt, and potatoes.

4. Make a paste of poppy seeds with water and add it to the potatoes.

5. Fold spinach leaves into the potato mixture and cook until done.

6. Serve hot with roti or paratha.
